Franck trained in his home region of Alsace in the east of France, on the border between Germany and Switzerland. The region is famous for dishes like Baickeofe and Choucroute, Tokay Pinot Gris along with good white
wines like Sylvaner and Riesling.
In France, he has won awards for his cooking and since
the early 1990s he has brought truly French cuisine and atmosphere to the Cambridge table.
